Wheat Free Blueberry Muffins

Ingredients:
1 cup bean flour
1 cup quick rolled oats, not instant
1 tablespoon baking powder
1 teaspoon baking soda
2 cups of blueberries
1/4 cup coarsely chopped almonds, optional
3 tablespoons olive oil
1/4 cup frozen concentrated mixed berry juice/ or cranberry juice
1/4 cup blackstrap cooking molasses
2 tablespoons maple syrup
1/2 cup soy milk or milk
1 egg
1 teaspoon nutmeg or cinnamon

Preheat oven to 350 degrees use a 12 cup non stick muffin tray or non stick coating. Mix together the flour, oats, baking powder and baking soda, and slowly add blueberries and almonds.
In a separate bowl mix olive oil, molasses, maple syrup, soy milk, juice concentrate and egg. Now pour over top of your flour mix and combine into on bowl.

Mix and spoon into your muffin tray.
Bake for approximately 20 minutes or until tester inserted in middle comes out clean.
Remove from oven and cool.

Wheat Free Pizza

1/3 cup minced onion
2 eggs, beaten
2 tablespoons melted butter
1-8 ounces can tomato sauce
1/4 teaspoon oregano
1/4 teaspoon basil
1 cup shredded mozzarella cheese
Pizza toppings -vegetarian or meat

mix rice,egg and onion and spread on 12inch non stick pizza pan. Bake at 350 degrees for 12 minutes or till ready.

Remove from oven and top with tomato sauce and spices spreading it evenly. After sauce add cheese and desired toppings.

Bake at 350 degrees for approx. 25 minutes or till done.

Wheat Free Waffles

3/4 cup water
4 teaspoons of vegetable oil
1/2 cup Amaranth flour
1/4 cup brown rice flour
1/4 cup glutinous rice flour
1/3 cup arrowroot powder
4 teaspoons baking powder
1/4 teaspoons salt
1/4 cup granulated sugar

In separate mixing bowls mix wet ingredients and dry ingredients. Slowly fold in wet ingredients into dry. Some lumping is okay, pour into waffles iron.

Wheat Free Pancakes

2 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon xanthan gum
1-1/4 cup water
3 tablespoons vegetable oil
2 tablespoons honey
2 egg yolks – beaten
1/2 cup chopped walnuts
2 egg whites

Beat eggs, mix dry and wet ingredients in two separate mixing bowls. Fold wet ingredients into dry. You may add blueberry, raspberry,banana or other fruit if desired. Pour into not stick frying pan. Cook both sides till light brown.
